Instructions

  1. Preheat the oven to 375 degrees F.
  2. Line a loaf pan or baking dish with parchment paper.
  3. Mix the eggs in a medium bowl on high for up to two minutes.
  4. Add the almond flour, xanthan gum, melted coconut oil and melted butter to the egg mixture. Continue to mix.
  5. Scrape the mix into the loaf pan.
  6. Bake for 45 minutes until golden brown (or until a toothpick comes out clean).
  7. Allow bread to cool, then slice it into 12 slices.
  8. Whisk together the egg wash ingredients in a small bowl and dip each slice into the wash, flipping to fully cover.
  9.  In a medium-sized skillet over medium heat, fry the french toast for about 3-4 minutes on each side.
