These Low Carb Zucchini Pizza Bites are a fun, healthy twist on pizza night. Made with fresh zucchini, sugar-free marinara, and melty mozzarella, they’re the perfect snack or appetizer that’s gluten-free, keto-friendly, and ready in under 20 minutes.

Ingredients

  • 2 medium zucchini, sliced into ¼-inch thick rounds
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ½ cup sugar-free marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment paper or use a wire tray in an air fryer/toaster oven.
  • Lightly cover zucchini slices with olive oil & salt and arrange in a single layer.
  • Bake for 5-10 min to soften slightly.
  • Remove from oven, spoon a little marinara onto each round and top with cheese.
  • Return to the oven/air fryer for 5–7 min, or until cheese is melted and bubbly.
  • Enjoy right away.
