Creamy & Comforting Celeriac Mash

This creamy celeriac mash recipe is a simple, elegant, and healthy low carb alternative to mashed potatoes. It is just as easy to make and the mild celery flavor pairs beautifully with the robust garlic flavor and herbs.

Ingredients

  • 2 pounds celery root/celeriac
  • 3 tablespoons butter
  • ¼ cup heavy cream
  • 1/4 to 1/2 cup chicken stock
  • 3 cloves of garlic
  • 2 tablespoons of fresh thyme
  • 1 tablespoon + 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Heat a large pot of water and generously season it with 1 tablespoon of salt.
  2. Carefully peel your celery root by cutting off the top edge of each bulb.  This will provide a sturdier surface and make it safer to peel.  Once the top is cut off, turn the celery root over and cut off the bottom edge.  Using a very sharp paring knife or vegetable peeler, slice off the skin.  Cut into ½” slices and then into small cubes.
  3. Once the water is boiling, carefully add the peeled celeriac cubes to the pot.  Cook for 15-20 minutes until fork tender.  Remove from heat and drain.
  4. Add butter, heavy cream, 3/4 teaspoon salt, pepper, thyme, and garlic to the pot.  Using a potato masher, press the ingredients together until your desired texture is achieved.  You can also puree this for a much smoother texture.  Just add everything to a high speed blender and mix until smooth.  Add chicken stock to thin mash out to desired taste.
  5. Adjust seasoning if needed and top with a pat of butter and extra fresh thyme or parsley.
