Garlic Butter Shrimp

If you love garlic, this garlic butter shrimp is an easy recipe for weeknight meals. Enjoy with a glass of low-carb white wine or a side of zucchini noodles.




  1. In a large cast iron over medium-high heat, add the butter, shrimp, onion, red bell pepper, and minced garlic, stirring to combine, and cooking until the onions become translucent and fragrant, about 6-8 minutes.
  2. Add the coconut milk or heavy cream, spinach, parmesan, sea salt, pepper, and seasoning, stirring to combine, bringing the mixture to a boil. 
  3. Reduce heat to medium-low and let simmer for 15 minutes.
  4. Serve over cauliflower rice or steamed broccoli and top with freshly chopped parsley
