Ingredients

  • 46 chicken breasts
  • 1 cup chicken stock or bone broth for 6qt Instant pot/1 ½ cups chicken stock or bone broth for 8qt Instant Pot

Seasoning Options:

Basic:

  •  1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 teaspoons poultry seasoning

Italian:

  •  1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoon Italian seasoning
  • ½ teaspoon oregano
  • 1 teaspoon garlic powder

Mexican:

  •  1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon paprika
  • ½ teaspoon oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Add chicken stock to the bottom of the Instant Pot.  Add chicken and desired seasonings.  Replace lid, seal, and close valve.
  2. Set Instant Pot to MANUAL + 10 minutes.  When the timer goes off, manually release pressure and carefully remove the lid.
  3. Dice chicken or shred with two forks or use a hand mixer (or stand mixer) to break the chicken apart.

Notes

  • 12 minutes for fresh and thawed chicken thighs
  • 20 minutes for frozen chicken breasts or frozen thighs
  • 18 minutes for bone-in chicken thighs
