The Best Keto Cauliflower Pizza Crust

  • 5 cups (or 1.5 pounds of) cauliflower
  • 1/2 cup mozzarella cheese (grated)
  • 2 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1 tablespoon flax meal
  • 1 egg
  • 2 teaspoons of Italian Seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  1. Preheat oven to 400° F and place a pizza stone in the oven to heat.  If you do not have a pizza stone, a regular sheet pan will be fine and no need to heat it.  
  2. Grate the cauliflower on a box grater or save time and use a food processor.  Add grated cauliflower to a large microwave safe bowl.  Cover with plastic wrap.
  3. Cook cauliflower in the microwave for 4-5 minutes until tender.  Carefully remove from the microwave with oven mitts or a towel to protect your hands.  Let cool.
  4. Place cooked and cooled cauliflower in a kitchen towel and ring out all of the excess moisture over your sink.
  5. Add drained cauliflower back to the bowl and add remaining ingredients.  Using your hands mix dough into a small ball.
  6. Remove pizza stone from the oven and carefully press the crust mixture into a ¼” circle.
  7. Bake for 20 minutes. Remove from oven and add desired toppings.  Bake for an additional 10-12 minutes until crust is golden brown and the cheese has melted.
