Keto Chicken Nuggets

Skip the fast food and whip up these juicy and tender chicken nuggets this week!  A healthy and simple meal is only 20 minutes away.



  • 1 pound chicken breast (cut into 1” strips)
  • 4 ounces pork rinds
  • 1/2 cup parmesan cheese (finely shredded)
  • 2 eggs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley 
  • 1 teaspoon salt
  • 1/4 teaspoon pepper


  1. Preheat the air fryer to 350°F.
  2. Add pork rinds, parmesan cheese, and all of the seasonings into a small food processor.  Pulse to a fine crumb texture.
  3. In a small bowl, add eggs and whisk for 10-15 seconds.
  4. Dip each piece of chicken into the egg and then into the pork rind mixture.  Place in a single layer in the air fryer.
  5. Cook for 15 minutes, flipping the chicken half way through to crisp on both sides.
  6. Garnish with fresh parsley to serve.
