1 pound boneless chicken breast (cut into 1” strips)
1/2 cup hemp hearts
1/2 cup almond flour
2 eggs
1 tablespoon dried garlic flakes
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Pinch cayenne pepper
Olive oil or avocado oil cooking spray
Instructions
Preheat the oven to 400°F and line a baking sheet with parchment paper. Set aside.
In a shallow medium sized dish combine almond flour, hemp hearts, garlic flakes, paprika, salt, pepper, and cayenne. Whisk to combine.
Add eggs to a separate shallow dish and whisk well.
Batter each chicken strip by dipping each strip in the egg, then toss in the dry mixture until well coated. Place each chicken strip on the prepared baking sheet.
Spray well with olive or avocado oil.
Bake for 15-18 minutes until chicken is golden brown and cooked through.
Serve with your favorite dressing, no sugar added ketchup, or any dipping sauce you prefer.
