  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Add almond flour, baking soda, coconut flour, salt, and xanthan gum to a small bowl.  Whisk to combine.
  3. Add butter and sweetener to a large bowl (with an electric mixer) or stand mixer.  Beat butter until light and fluffy. Add egg, espresso, and almond butter, mix for 20-30 seconds.
  4. Slowly add dry ingredients to wet ingredients in 3 small batches, mixing in between each batch until smooth.
  5. Stir in chocolate chips.  Divide and portion dough on prepared cookie sheet.  Press down slightly to flatten.
  6. Bake for 15 minutes or edges are set, but the center is still soft. Let cool on a wire rack, and serve.
