Valentines Cake Pops

These delicious little cake pop bites make the perfect Valentine’s Day treat whether you’re cooking up something for a special someone, or sharing with a crowd.

Icing:

  • 28 grams melted keto-friendly dark chocolate, melted

additional/optional topping:

  • keto-friendly sprinkles

Instructions

  1. Preheat oven to 375 F.
  2. In a large bowl, mix together the first four ingredients and set aside.
  3. In a medium-sized bowl, mix together the melted butter, eggs, and almond milk.
  4. Add the wet ingredients to the dry ingredients, mixing to combine
  5. On a baking sheet lined with parchment paper, spread the batter so it’s about 2 centimeters thick and bake for 15 minutes or until easily pierced with a toothpick.
  6. While the cake is cooling, whip together the cream cheese, butter, sweetener, and vanilla flavoring.
  7. Once the cake has cooled, crumble it into a large bowl.
  8. Using a hand mixer, mix in the cream cheese mixture, being careful not to add too much (the frosting acts as a glue, so mixture should be cake-like still).
  9. Use a cookie scoop to scoop the batter, roll into a ball, and place it on a baking sheet lined with parchment paper, and chill for 20 minutes.
  10. While the cake balls are chilling, whip together the icing.
  11. Use a lollipop stick to stick into the flat end of the cake ball, dunk the cake ball into frosting mixture, cover in sugar-free sprinkles, and chill for an additional 10 minutes.
