Avocado Deviled Eggs

These Avocado Deviled Eggs come with little prep time and many health benefits that puts a new twist on a classic American dish the whole family will enjoy.

Ingredients

  • 6 Large eggs, hard-boiled
  • 1 Large ripe avocado
  • 1 tablespoon lime juice or lemon juice
  • 1 tablespoon finely chopped red onion
  • 2 tablespoons finely chopped cilantro
  • 1/4 teaspoon sea salt or kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika or regular paprika

Instructions

  1. Cut the eggs lengthwise, remove the yolks, and place eggs aside.
  2. Add egg yolks, avocado, red onion, lime juice, cilantro, salt, and pepper to a small bowl. Mash and stir well to combine.
  3. Arrange egg white halves on a large platter. Fill the egg halves with avocado/egg yolk mixture. If you have a piping bag this can make the process a little smoother. Garnish with a pinch of paprika and extra cilantro if desired.
