4–6 chicken thighs (boneless, skinless)
2 tablespoons olive oil
Juice and zest of one lemon
1/4 cup chicken broth
1 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic (thinly sliced)
1/4 teaspoon red pepper flakes
1 teaspoon dried Italian seasoning
2 tablespoons butter
Instructions
Preheat the oven to 400°F.
Add olive oil to a large cast iron or oven safe skillet set over medium-high heat.
Lightly season chicken thighs with 1/2 teaspoon salt, a pinch of pepper, and Italian seasoning. Sear meat on both sides until golden brown. Remove chicken from the skillet, leaving the heat on.
Add lemon juice, lemon zest, chicken broth, remaining salt and pepper, and red pepper flakes. Bring mixture to a simmer, then return chicken to skillet and turn off the heat.
Bake chicken in the oven for 15-20 minutes until meat is cooked through and reaches an internal temperature of 165°F. Stir in butter.
