  1. Add cream cheese, eggs, sweetener, and vanilla extract to a high-speed blender. Mix on high until smooth.
  2. Preheat a large nonstick skillet or pan under low-medium heat. Melt ¼ teaspoon of butter in a pan.
  3. Pour ¼ cup of batter onto the pan. Cover and cook for 2 minutes on each side until golden brown. Repeat step with remaining batter.
  4. Top with sugar-free maple syrup, butter, coconut butter, etc. if desired.
