Preheat oven to 350°F and line a baking sheet with parchment paper or coat with non stick spray/butter.
In a large bowl beat the egg white until light and frothy, about 1 minute.
Slowly add the monk fruit while continuing to beat the egg, then add the strawberry extract and strawberry collagen. Beat gently until all ingredients are well coated.
Add the pecans, almonds, pumpkin seeds, coconut flakes, coconut oil, and salt. Gently toss ingredients together.
Pour mixture onto prepared baking sheet and spread into an even layer.
Bake for 10 minutes rotate pan, gently stir cereal, and bake for an additional 10-12 minutes until golden brown. Turn oven off and keep pan in the oven for an additional 5-7 minutes.
Remove from oven, stir gently, and let cool completely. It will get crispier as it cools.
