This low-carb chicken tikka masala is a delicious and simple recipe to throw together for a weeknight Indian inspired dinner. The marinade, spices, and veggies are full of flavor and create a rich and warming meal. 

This recipe can also be made in an instant pot or slow cooker, but nothing compares to the skillet method.

  1. In a large bowl, add the chicken, coconut cream or yogurt, and garam masala and mix together until combined.
  2. While the chicken is marinating, add the chopped onion and bell pepper to a large skillet over medium-high heat and cook for 3 minutes.
  3. Add the chicken to the skillet and cook for 10 minutes, stirring every so often.
  4. Add the remainder of the ingredients to a high-speed blender, blending on high until combined.
  5. Pour the contents into the skillet and cook, covered, for 14-16 minutes, or until chicken reaches the internal temperature of 165 F. 
  6. Serve with a side of cauliflower rice or steamed cauliflower.
