Ingredients
2 cups almond flour
2 tablespoons coconut flour
1 teaspoon baking powder
1/2 teaspoon salt
5 whole eggs
1 tablespoon apple cider vinegar
1/2 cup butter
2 tablespoons chia seeds
2 tablespoon sesame seeds (roughly chopped)
2 tablespoons flax seeds
1/3 cup pumpkin seeds
Instructions
Preheat the oven to 350°F and line a loaf pan with parchment paper or non stick spray. Set aside.
In a medium sized bowl, add almond flour, coconut flour, baking powder, salt, chia seeds, sesame seeds, and pumpkin seeds. Whisk to combine.
Add eggs to a large bowl or stand mixer. Beat on high speed for 1 minute. Pour in apple cider vinegar and melted butter, stir.
Slowly add dry ingredients to wet ingredients in three small batches.
Pour into the prepared pan and bake for 40-45 minutes until the edges have begun to turn golden brown and a toothpick comes out clean when inserted in the center.
