Chicken and Veggie Shish Kabob

Shish Kabob

Grab your wooden skewers, bell peppers, red onion, and chicken or sirloin steak, it’s Mediterranean dinner night with these low-carb shish kabobs.



  • 2 organic chicken breast, chopped into large chunks
  • 2 large bell peppers, chopped
  • ½ red onion, chopped
  • 1 zucchini, sliced
  • ¼ cup mushrooms

Marinade for the chicken:


  1. Whip up the BBQ sauce and toss in the chicken, allowing it to marinate.
  2. While the chicken is marinating, chop the vegetables.
  3. Equally distribute chicken and vegetables onto the wooden or metal skewers.
  4. Grill the skewers until the chicken reaches an internal temperature of 165°F.


You can also bake these at 350°F for 25 minutes.
