  • 2 large zucchini’s (spiralized into noodles, you can use a basic vegetable peeler to make large ribbons too)
  • 2 tablespoons olive oil
  • 1 lemon (zest reserved + 1/3 cup of fresh lemon juice)
  • 4 cloves garlic (finely minced)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup of cream
  • A handful of fresh basil or parsley (roughly chopped)

  1. Add olive oil to a large saute pan set over medium heat.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Add lemon juice, lemon zest, salt, pepper, and heavy cream to the pan.  Cook for 8-10 minutes until sauce is reduced.  Adjust seasoning to taste.  Turn off heat.
  4. Add zucchini noodles and toss to coat in sauce.

Notes

Serve with your protein of choice, like this parmesan chicken or these mini meatloaves as a side. Garnish with fresh herbs and enjoy!
