Mini BBQ Meatloaf

For a quick and easy weeknight beef recipe, look no further than this delicious low-carb BBQ meatloaf.

Before you start preparing your ingredients, preheat your oven to 375 degrees f, and coat either four mini loaf pans or a muffin tin with non-stick spray. You could also use muffin cups if you prefer.

Next, gather your ingredients along with a small bowl and a large bowl.

In the small bowl, crack your egg and add in the black pepper, salt, smoked paprika, dry mustard, celery salt, garlic powder, and chopped parsley. Mix all ingredients until they’re well combined.

Add your ground meat into a large bowl, and then pour the contents of the small bowl into the larger bowl. Using your hands, massage the egg mixture into the meat until it’s evenly distributed.

Divide the mixture into your loaf pans or muffin tin, and brush the tops of each with barbecue sauce.

Place in the oven, and bake for 25 to 30 minutes, until the meatloaf is firm and cooked through.

Finally, remove from oven and garnish with fresh parsley.

Recipe Notes:

If you want to mix it up with the herbs, you can add in Italian seasoning or any other spices that you enjoy in savory dishes.

You can also add cheese to this recipe by mixing in some parmesan or cheddar cheese to the ground meat.

  2. Add egg and all seasonings to a large bowl.  Whisk well to combine.
  3. Add ground meat.  Using your hands, massage egg mixture into meat.  Mix until evenly distributed.
  4. Divide meat mixture into loaf pans or muffin pan.  Brush the tops of each with BBQ sauce, place on a baking sheet, and bake for 25-30 minutes until firm and cooked through.  Remove from oven and garnish with fresh parsley if desired.
