Keto Eggnog

It’s not the holiday season without some homemade keto eggnog, top this low-carb eggnog with some sugar-free whipped cream, nutmeg, and cinnamon.

  1. In a medium-sized mixing bowl, whisk together the egg yolks and sweetener to combine.
  2. In a small saucepan over medium-low heat, add the cream, milk, collagen, nutmeg, and salt, whisking to combine.
  3. Bring to a simmer, then add in a spoonful of the liquid to the egg mixture, mixing well. 
  4. Continue to add the liquid to the egg mixture until most of the liquid has been added, then pour the mixture back into the saucepan and continue whisking as it thickens and it reaches a temp of 160 F. (should only take a few minutes). 
  5. Remove from heat and stir in the vanilla.
  6. Refrigerate until cooled and top with whipped cream and cinnamon
