What are the first words you think of when you hear the word chips? Chances are, the words healthy, low carb or keto friendly are not the first few to come to mind. Well, throw out what you think you know, because there are new, low carb friendly chips in town. Among some of the easiest low carb recipes out there, kale chips are one of the healthiest (and quickest to make).

Besides the quick prep time of kale chips, these veggie chips contain many health benefits that will satiate your crunch craving while improving your health at the same time. Some of the properties of kale chips that make them such a nutritional powerhouse include:

  1. Rich in antioxidants
  2. Good source of anti-inflammatories
  3. Promotes detoxification

#1: Rich in Antioxidants

Kale is incredibly rich in antioxidants like vitamin C and beta carotene. Antioxidants help fight off damaging free radicals. Although naturally produced by the body, free radicals are unstable molecules that can negatively affect cell function.

#2: Good Source of Anti-Inflammatories

Kale is the ultimate anti-inflammatory food, providing the perfect balance of omega-3 fatty acids and omega-6 fatty acids. While omega-3 fatty acids have been known for their health benefits, omega-6’s provide plenty of nutritional value and help stave off inflammation.

#3: Promotes Detoxification

When you digest kale, the glucosinolates it contains are broken down into metabolites. Your body naturally produces metabolites to help control the rate of your metabolism as well as promote certain enzymatic reactions — such as detoxification!

  1. Preheat oven to 350 degrees
  2. Cut up kale and spread on a baking sheet lined with parchment paper
  3. Spray kale with avocado oil spray
  4. Season with 2 tbsp of himalayan sea salt
  5. Bake for 15-20 min or until crispy
