Instructions

  1. Add egg whites and a pinch of salt to a bowl. Using an electric whisk or mixer, slowly add gelatin while whisking until stiff peaks form.
  2. In a separate bowl, whisk egg yolks (and optional vanilla) until creamy. Add collagen and whisk until pale and fully incorporated.
  3. Gently fold the whipped egg whites into the yolk mixture, being careful not to deflate the batter. It should be light and airy.
  4. Heat a non-stick skillet over medium-low heat and lightly grease with butter or ghee.
  5. Spoon ~2–3 tablespoons of batter per pancake into the pan. Cover with a lid and cook for 2–3 minutes per side, until golden and set.
