Ingredients

  • 2 medium zucchini, sliced into ¼-inch thick rounds
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ½ cup sugar-free marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment paper or use a wire tray in an air fryer/toaster oven.
  • Lightly cover zucchini slices with olive oil & salt and arrange in a single layer.
  • Bake for 5-10 min to soften slightly.
