Ingredients

  • 2 medium zucchini, sliced
  • 1 Tbsp olive oil
  • 1/2 tsp salt
  • 1/2 cup sugar free marinara
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 425F. Line a baking sheet with parchment paper, or use a wire tray in an air fryer.
  2. lightly coat zucchini slices it’s olive oil and salt. Arrange in a single layer on tray.
  3. Bake for 5-10 minutes to soften slightly.
  4. Remove from oven. Spoon a little marinara onto each round and top with shredded cheese.
  5. Return to oven for 5-7 minutes, or until cheese is melted and bubbly.
  6. Serve hot and enjoy immediately.
