This dish gets its name from the caprese salad, which originated in Italy and is known for its distinct Italian ingredients, which when baked together in the oven bring all of their sweet, salty, creamy and even slightly acidic flavors together.

Be sure to use balsamic vinegar or make your own balsamic glaze for this recipe, as oftentimes store bought glazes can be high in sugar. As for tomatoes, if you prefer to use marinara instead, also be sure to read the label and make sure you are picking up a low sugar brand or making your own.

Start your keto caprese chicken recipe by preheating your oven to 400F. Use a basting brush to coat your chicken breasts in olive oil first. Then, blend your Italian seasoning, garlic powder and a little salt and pepper together and sprinkle it evenly over the chicken breasts before laying them in a dish in the oven for 15 minutes.

After 15 minutes, take your sliced roma tomatoes and lay two slices each on each chicken breast. Put the dish back in the oven for 10 minutes.

Remove your dish once more and add one slice of mozzarella on top of each tomato and chicken breast and put the dish back in the oven for around 8 minutes. This should melt the cheese and cook the chicken entirely. To be sure the chicken is cooked to 165F internally, you can use a meat thermometer. Lastly, you can serve your low carb caprese chicken with a generous drizzle of balsamic vinegar and some shredded fresh basil leaves.

There are a variety of ways to make this keto chicken caprese recipe unique.

It is possible to change the way you slice the chicken. If you have thicker chicken breasts, you could slice them horizontally for thinner breasts, which would mean a quicker cook time. You could also cut your chicken “hasselback” style. This means thinly slicing your chicken breast vertical, but not all the way through so the slices are still attached to the chicken. This way you can stuff a slice of cheese and a tomato slice in each slot. A very unique way to make this dish!

Chicken thighs could be used instead of chicken breasts, just be mindful of the cooking time. You could also change the cooking method. You could grill it, air fry it or pan sear it on the stove. You could add different seasonings or try a different kind of cheese too, although the fresh mozzarella really makes the dish!

To store your keto caprese chicken, be sure to let it cool first. Then you can store your leftovers in an airtight container for 3-4 days. Ideally, store this dish in a glass container. They are cleaner and don’t absorb food, germs or smells the way plastic can. Glass also preserves the flavor and quality of this dish better than other materials.

Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 2 tbsp. Olive oil
  • 1 tsp. Italian seasoning
  • 1 tsp. Garlic powder
  • ½ tsp. Salt
  • ½ tsp. Black pepper
  • 2 medium Roma tomatoes, sliced
  • 3 oz. whole milk mozzarella cheese, sliced
  • 2 tbsp. Balsamic vinegar
  • 810 fresh basil leaves

Instructions

  1. Preheat your oven to 400F.
  2. Lay your chicken on a plate or a clean cutting board and coat them with the olive oil and dried seasonings. Place the chicken in a cooking dish and put them in the oven for 15 minutes.
  3. Remove the chicken and place 2 slices of the tomatoes on each piece of chicken. Place the dish back in the oven for 10 minutes.
  4. Remove the dish a third time and place a thin slice of mozzarella over each tomato and chicken breast and place the dish back in the oven for 8 minutes.
  5. Remove the dish and drizzle your balsamic vinegar over each chicken breast and add torn basil to the top of your dish before serving. You can also chiffonade the basil for fun spirals like I did!
