Both spinach and artichokes contain a wide variety of nutrients including iron, magnesium, potassium, fiber, and calcium. Artichokes are an especially unique ingredient that many people are not entirely familiar with, but should be. They are an extremely versatile food and contain amazing health benefits.
Why are artichokes so special?
- Protects the immune system
- Fights birth defects
- Great for the digestive system
- Increases bone mineral density
#1 Immune System
Artichokes contain one of the highest amounts of antioxidants amongst all vegetables. These antioxidants fight against the effects of free radicals and also contain polyphenols, which have been said to slow down effects of cancer. In addition, artichokes also contain a large amount of vitamin C, which is also a well known antioxidant that can help protect the immune system.
#2 Birth Defects
Artichokes contain a large amount of folic acid. This is an essential nutrient which helps prevent birth defects in babies’ brains and spinal cords. In addition to man-made prenatal supplementation, using artichokes in meals adds a more natural boost of folic acid.
#3 Digestive Health
Artichokes are rich in fiber. This is a staple for improving the health and functionality of the digestive process. Not only does fiber keep us feeling fuller longer, but it also helps keep bowel movements regular and decreases occurences of constipation or diarrhea.
#4 Bone Health
Artichokes contain key vitamins and minerals such as magnesium, phosphorus, and manganese, all of which are essential in increasing bone health and density.
If you are tempted to add even more artichokes to this recipe, there’s no need to hold back. In addition to the nutritional benefits they have to offer, they provide wonderful texture as well. Artichokes can mimic a meaty texture, without adding the extra protein in this dish that could kick you out of ketosis.
