Everyone needs a little help during the week when it comes to getting a healthy dinner on the table. Easy side dishes that are keto friendly are pretty simple and straightforward, load up on as many low carb, nutrient dense vegetables as you can and add healthy fats to keep your energy levels steady and your blood sugar stable. Typically, the challenging part to any meal is having a nice variety of easy proteins to accompany your veggies. Fortunately, chicken breasts are extremely versatile and one of the most popular proteins for a quick meal. They can be flavored a thousand different ways and can be cooked using a wide variety of methods.
For quick weeknight proteins a lot of people tend to gravitate towards shredded chicken cooked in the Instant Pot simply. It’s easy, it’s quick, and once you throw everything in the pot you can walk away. The downside is there are only so many ways to use shredded chicken and if you are anything like my family, you can only have so many chicken bowls in one month despite how tasty they are!
Fortunately I have recently rekindled my love for using the oven for one pan meals, specifically for cooking chicken breasts. I am officially here to tell you that oven baked chicken is every bit as easy as using your pressure cooker, perhaps even better. It’s also more tender and juicier than pan cooking it. No need for marinating and no need for searing before cooking. This baked chicken recipe can easily be modified and instead of cooking your vegetables separately, you can cook them right in the same pan. This allows all of the flavors to marry with one another and the result is perfection!
