Brighten up your day with these sweet and tangy lemon macadamia nut fat bombs. When that energy starts to dip, these little treats will help refuel you and give you the power you need to get through the day!

Ingredients

Dough:

Coating:

  • 4 ounces sugar free white chocolate
  • 1/2 teaspoon coconut oil
  • 1/4 cup macadamia nuts 

Instructions

  1. Add all fat bomb ingredients to a medium sized bowl and combine well with a hand mixer.
  2. Using a small cookie scoop, divide and portion dough into small balls.  Roll each with your hands and place them on a parchment lined baking sheet or dish.  You can also use a silicone mold if you rather have them in cute shapes.
  3. Refrigerate for one hour or place them in the freezer for 15 minutes to set.
  4. Place white chocolate and coconut oil in a small bowl and microwave in 30 second increments until melted and smooth.
  5. Dip and coat each dough ball with white chocolate and place back onto your baking sheet or dish.  Sprinkle with chopped macadamia nuts and extra lemon zest if desired.
  6. Let harden in the fridge for 15 minutes to serve.  So
